To make healthy pickled beets, you’ll need:
- Eight large, fresh beets
- One cup of vinegar
- Half a cup of sugar
- One and a half teaspoons of whole cloves
- One and a half teaspoons of whole allspice
- Half a teaspoon of salt
Here are the instructions:
- Start by scrubbing the beets clean and cutting off the tops, leaving about one inch of the stems.
- Place the beets in a Dutch oven and cover them with water. Heat the water until it boils.
- Once boiling, reduce the heat to low, cover the pot, and let the beets simmer for 25 to 30 minutes, or until they are tender.
- Remove the beets from the water and let them cool.
- After the beets have cooled, peel them and slice them. Put the sliced beets in a bowl and set them aside.
- In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Heat this mixture until it boils, which should take about 5 minutes.
- Pour the boiling vinegar mixture over the beets in the bowl.
- Refrigerate the beets for at least one hour to let them pickle.
- Before serving, drain the liquid from the beets.
Your healthy pickled beets are now ready to enjoy!
