Many people try extreme diets for different reasons—some want to lose or gain weight, others want to be healthier, and some follow specific diets for moral or ethical reasons.
But very few take on a challenge as extreme as Dr. Nick Norwitz did.
Dr. Norwitz, a researcher and educator, became well-known on YouTube after attempting a unique experiment: eating 700 eggs in one month. That’s about 24 eggs per day—two full cartons daily!
He ate one egg almost every hour to reach his goal. His reason? He wanted to prove that eating so many eggs, which are high in cholesterol, would not necessarily raise his LDL cholesterol levels.
For years, people believed that high cholesterol levels were bad for the heart and that eating cholesterol-rich foods could lead to serious health problems.
When Dr. Norwitz was younger, he was taught the same thing. However, in recent years, some health experts have said that cholesterol is not as dangerous as once believed. Dr. Norwitz wanted to put this idea to the test in an extreme way.

Throughout the experiment, he closely monitored his body’s response. Surprisingly, after consuming 700 eggs in 30 days, his cholesterol levels did not rise as expected. In fact, his LDL cholesterol—the type often labeled as “bad” cholesterol—remained stable and even decreased.
In the first two weeks, his LDL levels dropped by 2%. Then, in the next two weeks, they plummeted by 18%. This was the opposite of what most people would expect from eating so many eggs.
Dr. Norwitz explained that the liver plays a key role in regulating cholesterol. It adjusts cholesterol production depending on what a person eats. Near the end of the experiment, he also started adding carbohydrates to his diet, including blueberries, bananas, and strawberries.
This caused an even greater reduction in his LDL cholesterol. He later told the New York Post that the extra carbohydrates had a stronger effect on his cholesterol levels than the high amounts of dietary cholesterol he was consuming.
His experiment raised interesting questions about cholesterol and how diet affects the body. While Dr. Norwitz’s experience was unique, he didn’t recommend that others eat 24 eggs per day. His goal was to challenge common beliefs about cholesterol and nutrition.
